If, on your adventures, you are so (un)lucky to encounter a Vampire, likely a battle will follow. Either by your own curiosity or because the vampire noticed your presence and charges at you.
Beware that they are tough opponents.
In battle, it is possible that you drop your guard for a moment and that the vampire manages to infect you with Noxiphilic Sanguivoria. That, on its own isn't as horrendous as it may sound but it leaves you with a choice. Either get it cured, or embrace the life of a vampire.
Curing
-
Priest of Arkay
You might feel like getting rid of the infection and luckily the central city houses exactly the man for the job. In the Temple District you'll find a Priest of Arkay who will gladly help you ... if you bring sufficient money. Know that his 'kindness' gives you no lifelong cure: you'll have to get back to him again whenever you're infected again.
Living the life
Tired of paying the priest (and getting each of his kids through college on your funding, as some put it) or maybe intrigued by what lies behind door number two? Go and find Astaron Septin. He can be found in a more central, yet secluded place, shielded from the sun.

Astaron Septin
He will show you the path to become a vampire. Let it be known that no one has returned to 'normal' after this choice. Feeling a bit weird about confronting him on your own, find someone who's gone through it before. It may help you ease your nerves. Or you might get nudged more than you cared for ...
